Sardines are related to herrings, both in the family Clupeidae. The term sardine was first used in English during the early 15th century, and may have originated from the Mediterranean island of Sardinia, around which these fish were once abundant.

Nutritional Value:
This fish contains thiamin, riboflavin, niacin, vitamin B6, folate, vitamin B12, vitamin A, vitamin D, vitamin E, and vitamin K. Besides being rich in omega-3 fatty acids, which are helpful in preventing heart diseases, taking sardines results in a reduced risk of developing Age-related macular degeneration (AMD).  

Best Served:
*This fish cooks very quickly on a hot grill (3 - 4 minutes on each side) so make a beautifully quick and simple al fresco starter
*Also works well roasted whole in the oven, then served with a sauce
*Grilling: By first rubbing the fillets with olive oil, a knob of softened butter and a squeeze of lemon juice before grilling skin-side up until the flesh is cooked through and the skin is golden and crispy
*Pan-fry them : the fillets cook very quickly, and cooking skin-side down in a hot pan again allows for wonderfully crispy skin
